We are delighted to welcome a close friend of Chef Alain Roux – William Curley MCA, the world-renowned pâtissier chocolatier and owner of some of London’s finest chocolate boutiques. As well as being awarded ‘Master of Culinary Arts’ status, William’s other accolades include being named ‘Best British Chocolatier’, four times by The Academy of Chocolate. William will share his insider secrets as he teaches you how to craft chocolate truffles in this immersive masterclass. Learn how to create silky ganache, understand the science of emulsification, as well as precision piping, coating and finessing techniques.
